Two Bean Chilli

Ingredients
1 tablespoon of mixed herbs
1 tablespoon of cumin
1 tablespoon of chilli powder
1 tablespoon of oil (olive or vegetable)
Salt and Pepper to taste
2 tsp of garlic paste or 3 cloves of garlic
1 medium white onion
3 big carrots
4 sticks of celery
2 x 400g of chopped tomatoes
1 x 326g can of sweetcorn, drained
1 x 400gcan of red kidney beans, drained
1 x 400g can of cannellini beans, drained
Method
Chop onion and garlic if using fresh
Chop carrot and celery
Add the oil to a deep pot and set on the stove
Add the onion and the garlic to the hot oil
Once the onion has softened add carrot and celery and STIR
Drain the sweetcorn, cannellini beans and kidney beans.
Add the cans of chopped tomatoes, sweetcorn and
the beans
STIR
Add all the spices and herbs, water to cover and plenty of salt and pepper.
Stir and leave to simmer for 30 mins
