Hearty Chicken Stew

TIPS
This dish can be thrown in the slow cooker, brown the chicken
first and then throw all ingredients in and add extra herbs and seasoning

Ingredients

2 teaspoons Mixed herbs

Salt and pepper to taste

1 tablespoon vegetable oil

1 large or 2 medium onions

2 cloves of garlic/1 teaspoon garlic paste

3 large carrots

3 large potatoes

1 cup Frozen peas

1 can chicken soup

1 kg chicken legs

1 tablespoon of vegetable oil

Optional: 1 Teaspoon of mustard of your choice (highly recommend)

Fresh thyme for added flavour

Method

Preheat the oven to 180°

Chop the onion

Peel carrots and potatoes and cut into bite size chunks

To a deep pan add the oil and put in the oven to heat

Once hot add the chicken legs and cook for roughly 5 mins then turn legs over and cook or another 5 mins

Remove legs from the pan and set aside

Add the onion to the pan & cook till golden

Then add carrots, potatoes and your garlic and stir

cook for 4-5 mins

Add the chicken soup, 2 cups of water, chicken legs

mixed herbs, salt & pepper and the optional mustard to the pan

Place in oven or 40 -45 mins until chicken is cooked

Remove from the oven and stir in peas

Cover and leave to sit for 5 mins

Serve and enjoy!
