Chickpea Pesto Pasta

Salt and Pepper to taste

1 tbsp of oil (olive)

2 tsp of garlic paste or 1 teaspoon granules 

500g pasta of your choice

2 x 500g can of chickpeas, drained

2 cups of frozen peas

4 large tablespoons of green pesto (more for added flavour)


Boil the kettle and add the water to the pan

Salt the water, the pasta and set to boil or 10 mins or until sot

Add a tablespoon of oil to another pan

When hot add the two cans of drained chickpeas and stir till soft

Add the garlic and keep stirring

Add the pesto, peas and a tablespoon of water from the pasta pot and cook for a few minutes

Drain the pasta and add to a bowl

Top with the chickpea mix and plenty of cracked black pepper

Adding Chicken or cheese to this dish will give it extra protein (but it doesn't need it)

Add a little extra water if reheating
