Chickpea Chorizo Tray Bake

Ingredients
2 tablespoons mixed herbs
2 tablespoons paprika
Salt and Pepper to taste
1 tablespoon of oil (olive or vegetable)
2 tablespoons of Lemon Juice
2 teaspoons of garlic paste/3 cloves of garlic
2 Red Onions
2 Medium sweet Peppers
1 pack of sliced chorizo
2 Carrots
2 cans of chickpeas, drained
200g of passatta (about half pack)
1 kg of Sweet Potatoes
Method
Preheat oven to 180°
Chop onion and garlic if using fresh
Cut the vegetables and potatoes into large chunks and add to a bowl
Add the garlic, oil and salt and pepper to the bowl and STIR
Pour ingredients onto a deep oven tray and
put into the oven or 20 mins
Then remove from oven and add lemon juice ,
the drained chickpeas, passata and herbs.
Tear up your chorizo slices and add to the tray
STIR the mix ensuring chorizo is covered in sauce
Put back into the oven or 15-20 mins
